3 c. cold cooked pork, cut into pieces
3 c. cold cooked rice
2 c. drained Mandarin orange sections
2 c. fresh or canned pineapple chunks, drained
1 c. diced green pepper
1/4 c. minced onion
1 3/4 c. mayonnaise
1 T. soy sauce
3-4 T. orange or pineapple juice
salt and pepper, to taste
1/2 c. blanched almonds
Combine first six ingredients in a large bowl. In small bowl, whisk mayonnaise, soy sauce, juice and seasoning to use as dressing. Toss and garnish with almonds. Serves 8.
