1 med. sweet onion, finely chopped
2 T. olive oil
4 cloves garlic, minced
2 c. vegetable broth
3 c. water
17.6-oz. pkg. Steamed Lentils from Trader Joe’s or 3 c. cooked lentils
1 pinch saffron
1 t. coriander
1 t. cumin
1 t. pepper
1 t. salt
1/4 c. lemon juice
In a large pot on medium heat, sauté onion with oil and garlic 3 to 5 minutes, or until onion is translucent. Add broth, water, lentils, and all spices (do not add lemon juice). Reduce heat and bring to simmer. Cover and cook 10 minutes. Puree in blender or with hand blender until smooth. Stir in lemon juice and let sit at least 30 minutes before serving for best flavor.
